WHere is an easy version of a cocktail found on the seasonal drinks list. This is a batch pre-mixed that's loaded with flavours associated with Christmas time, making it excellent for your holiday party. Save the extra syrup for brunch beverages, puddings, or to make more rounds of bikinis.
The Bikini Cocktail
Serves 10 servings
To make the Clementine Cordial (yields 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar
For the Premix (produces 850ml, serving 10)
400ml good quality vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine syrup (from the recipe above)
Fresh cranberries, as a garnish
Mandarin essential oil, as a final touch
Method
To prepare the Citrus Syrup: Place every ingredients into a pan, heat until it reaches a simmer, stirring until the sugar dissolves. Then, remove from the burner allowing it to cool completely. Pour to a clean bottle, cap it keeping it chilled, it can be stored for about four weeks.
To make Cocktail Base: Combine every spirits and syrup in a large bottle, allow it to infuse for 60 minutes, then strain preferably using a fine cloth, so it's fully clarified.
To serve: Add 85ml of the premix to a mixing glass filled with ice, gently stirring gently for one minute to chill. Strain into an cold coupe glass or a similar vessel, garnish with a few cranberries adding the final touch by giving it a light spray with the mandarin essence over the top.
